Equipment

  • 1 set measuring spoons
  • 1 set measuring cups
  • 1 spatula
  • 1 9" round cake pan or loaf cake
  • 1 parchment paper

Ingredients

  • 2 cup all purpose floug
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 3 large eggs room temperature
  • 1 cup sugar
  • 1 cup honey
  • 1/2 cup vegetable oil
  • 1/2 cup strong brewed coffee or orange juice
  • tsp vanilla extract

Instructions

  • Preheat and prepare: preheat oven to 350degree F. Lightly grease cake pan and line with parchment paper
  • Whisk dry ingredients. In a large mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, cloves and nutmeg
  • Mix the wet ingredients in another bowl. Beat the eggs with the sugar until smooth
  • Add honey, vegetable oil, coffee or juice and vanilla extract and mix until well blended
  • Gradually add dry ingredients to wet until just combined. Do not overmix - a few lumps are ok.
  • Pour the batter into your prepared pan. Smooth the top with a spatula and Back 40-50 minutes until toothpick comes out clean
  • Let cake cool in pan for 10 minutes and then transfer to a wire rack to cool completely. Once cool you can dust with powdered sugar, icing or drizzle with honey.
