Honey Lemon Cookies
2025 MSBA 2nd place winner cookies - cut out honey lemon cookies
Equipment
- 1 mixer with mixing bowl
- 1 set of measuring cups
- 1 set of measuring spoons
- 1 cookie sheet
- 1 wire rack
- 1 spatula
- 1 set of cookie cutters - any shape
- 1 plastic wrap
- 1 Rolling Pin
- 1 parchment paper
Ingredients
- 1 cup unsalted butter at room temperature
- 1/2 cup honey
- 1 large egg at room temperature
- 1 tsp vanilla extract
- 2 1/2 cup flour
- 1/2 tsp salt
- colored sanding sugar optional
Instructions
- Preheat oven to 325 degree F
- Beat butter and honey until thoroughly combined
- Mix in egg and vanilla extract
- Mix in flour and salt until just combined
- Divide dough into two parts. Wrap each section in plastic wrap and refrigerate for 30 minutes
- Remove first half of dough and roll out to 1/4" thick
- Cut dough into shapes with cookie cutter and optionally sprinkle the tops with colored sanding sugar
- Arrange cut out cookies on a cookie sheet lined with parchment paper.
- Bake for 13 minutes or until the edges begin to brown
- Cool cookies on a wire rack
- Roll out the second half of the dough, cut out shapes and cook
